The Australian Food Manifesto

Founded by Josue Lopez, executive chef of GOMA Restaurant, The Australian Food Manifesto encourages Australian chefs to work together alongside regional producers and the traditional owners of the land to establish a defined Australian cuisine, celebrating what makes us unique. 

I will:

  • be culinary sensitive to the seasons and what is seasonal produce in my region

  • work together, share and collaborate with local chefs and my broader food community

  • use local and native ingredients wherever able

  • be innovative, developing new applications and constantly producing the very best food

  • promote animal welfare, sustainable farming and aquaculture

  • remain impartial, professional and non political in my stewardship as Regional Chef/Producer/Elder
